Tasty enough for a toddler – and relatively easy for a meatloaf. I do some tweaks though – I use 1 lb ground beef, 1/2 lb ground pork. I also throw in a few large mushrooms that I dice finely, as well as a 1/2 of a red bell pepper.
Meal Three
Tuscan White Bean Soup, Fruit Salad
There’s a lot of room for versatility in this recipe. I used chicken broth and substituted spinach thrown in at the very last minute in place of the escarole. Whatever changes you decide to make, don’t leave out the Parmigiano rind, it is a key ingredient.

Baked Ziti with Sausage, Salad
Use turkey sausage, low fat cheeses and low sodium spaghetti sauce to make the dish healthier.

Salmon Cakes with Dill Sauce, Baked Sweet Potatoes Fries, Broccoli
If you are trying to boost your intake of omega-3s, try this simple favorite. It is a great way to use convenient canned (or leftover) salmon. The tangy dill sauce provides a tart balance.
