Meal Two
Open Faced Egg Sandwiches with Mushrooms, Salad
Prepare plain egg and cheese sandwiches for the kids or picky eaters. Feel free to use regular onions and button mushrooms if that is what you have on hand.
Meal Three
Slow Cooker Chicken Tortilla Soup, Fruit
The recipe calls for cooked chicken but feel free to use uncooked chicken breasts. If so, remove them toward the end of the cooking time and shred. You can buy tortilla chips to serve on the side instead of preparing them from scratch.
Meal Four
Pecan-Crusted Tilapia, Brown Rice, Green Beans
Substitute any flaky fish that you prefer and feel free to use other nuts such as pistachios or almonds. I prefer panko breadcrumbs instead or regular breadcrumbs because they produce a crispier crust.
