The Meal Plan for the Week of March 7, 2022

Meal One

Chicken Tzatziki Bowl with Tzatziki Sauce

This is one of my go-to recipes. Mediterranean-style food is full of fresh ingredients and packs a punch when it comes to flavor! This recipe also works well if you like to meal prep, which means you get to enjoy it throughout the week for dinner and lunch.

Meal Two

Jamaican Jerk Chicken with Mango Salsa

Jerk chicken is all about bold flavor. The marinade in this recipe gives the chicken a spicy and sweet taste, that is sure to put you on island time! Pair the spiciness of the chicken with the freshness of the mango salsa and you’ve got a balanced meal. Not a fan of spicy food? Cut out the habanero chilis and let the ginger and allspice be the flavor stars!

Meal Three

Pad Thai

This Pad Thai is a great copycat of a traditional recipe that can be made in 30 minutes. It is a delicious blend of fresh ingredients, and the easy homemade sauce tastes so good that you and your family might think it came from a restaurant!

Meal Four

Chicken Chop Suey, Brown Rice

While chop suey isn’t a traditional Chinese dish, it’s one of the most popular dishes in Chinese restaurants outside of China. This is a quick and easy stir fry recipe, that I like to call a “refrigerator meal”! You can toss whatever protein and vegetables you have in the fridge into a pan, combine with the homemade sauce, and you’ve got a delicious meal on the table in no time. Pair with brown rice or noodles to make it a complete meal.

Meal Five

Moroccan Chicken Tagine

Who doesn’t love a one-pot dish?! This traditional Moroccan dish is packed with flavor and can be made ahead of a time to cut back on meal prep during busy weeknights. Serve with rice, quinoa, or try couscous if you’re feeling adventurous!

I’m a Registered Dietitian, which means that food is always on my mind! I love to try new recipes but like to keep them simple and easy for busy worknights. Some of my favorite recipes to try are those from around the globe to incorporate different flavors into my weekly meal plan. This keeps eating exciting and I look forward to healthy, delicious meals!
